Spinach Souffle
2 pkg. frozen spinach
1/4 cup grated Parmesan cheese
1 can cream of potato soup
1 cup sour cream
Jack Cheese
Thaw & drain spinach. Mix first 4 ingredients together. Place in casserole & cover top completely with a thick layer of grated or thinly sliced Jack Cheese. Bake at 350 degrees for 45 minutes.
[Do not reheat in microwave--Jack Cheese becomes Goodyear Rubber]

London Broil
1/4 cup California Dry Sherry [Christian Brothers is fine]
1/4 cup salad oil
1/4 cup soy sauce
Juice of 1 lemon
1 clove garlic [pressed or cut fine]
1 flank steak [not scored]
Mix together first 5 ingredients. Pour over steak & refrigerate overnight. Turn when you think of it. Let meat stand at room temperature at least 1 hour before broiling or Bar-B-Q ing to your taste. Broiling about 5-6 minutes on each side 3 inches from heat for 'rare'. - Sue Wagner


Me-Ma's Pinto Beans
16 oz bag of dry pinto beans
1 heaping tbls. brown sugar
1/2 onion, chopped
Ham Bone, or chunks of ham, or 1/2 stick butter if your out of ham
Salt & Pepper to taste

Wash and soak beans overnight. Mix ingredients, boil 20 min. then simmer at least 1 hour or until tender. - (Huh?).
